Damn Good Tacos

Family is a crazy concept. Many times you share your oldest memories with them and so the roots run deep. They know the best way to get on your nerves but can also offer some of the deepest forms of support. I come from a divorced family that has a loaded past so when we come together, although full of love, these moments can really make blood boil. I will forever be grateful for the love I've received from my family but will never fully understand the connection and relationship that comes along with it. Food for thought. Speaking of food...

Recipe of the Day : Damn Good Tacos (4 servings)

45 minutes total

1 lb poached, shredded chicken

2 bell peppers chopped

1 head cauliflower chopped

1 heirloom tomato diced

1 package of hard or soft taco shells

1/2 yellow onion minced

1/2 can black beans

2 tbsp taco seasoning

1 tbsp salt

1 tbsp olive oil

1 tbsp garlic powder

2 tsp jalapeno juice

1 tsp cumin

1/2 lime juice

Cauliflower Mexican Rice

Cover bottom of pan with 1/4 inch of water (just enough to coat the bottom) then add cauliflower. Bring to a boil and cook on medium heat until the water evaporates. Add 1 tbsp taco seasonings, 1/2 tbsp garlic powder, 1 tsp jalapeno juice and salt. Mix until fully incorporated. Once cauliflower is fully cooked - crunch is gone - add black beans. Cover and simmer until beans are warmed.

Peppers and onions

Drizzle olive oil evenly on bottom of pan and add onions and peppers. Cook on medium to low heat until tender. Add 1/2 tbsp taco seasonings, cumin and 2 tsp garlic powder. Mix and set aside.

Pico de Gallo

I didn't have cilantro because I never use it all but found this to be just as tastey. Place the tomatoes and onions in a bowl then mix in lime juice, 1 tsp jalapeno juice, 1/2 tsp taco seasoning and 1 tsp garlic powder. Salt to taste.

Add the rest of the taco seasoning to the chicken. Make your tacos how you'd like with the fixins! Enjoy these guilt free treats!
