#FitFebruary Day 17

More than half way through and I'm feeling great. Super tired as always but feeling lighter and more clear. I've noticed my muscles becoming more defined and my body aching for activity. My day job mostly consists of sitting at a desk so daily workouts have helped this discomfort! I'd be lying if I said I didn't want a drink but what's 264 more hours... who's counting anyways?


Daily salads have also made my insides feel cleaner - not sure what that even means but try it and you'll see what I mean. Today I made Spinach Turkey burgers and damn they were good.



Daily Recipe: Spinach Turkey Burgers (4 servings)

1 lb ground turkey (91% lean)

8 oz fresh spinach

1 egg

1/4 cup Parmesan cheese

1 tbsp olive oil

2 tsp minced garlic

2 tsp garlic powder

1 tsp Italian seasoning

1 tsp crushed red pepper flakes

Salt and pepper to taste


Sauté spinach in olive oil until cooked down then add garlic powder and chop lightly with a spatula. Add ground turkey, sautéed spinach, egg, parmesan cheese, minced garlic, Italian seasoning, crushed red pepper, and salt and pepper in a bowl. Mix thoroughly with your hands then form burgers. Cook in oiled pan (I used the spinach pan for less clean up) until fully cooked inside. I served burgers in pita pockets with hummus, radishes, cucumbers, and tomatoes. Serve hot and enjoy!
