#FitFebruary Day 26

I subbed two classes today and for the first time got the "oh, you're teaching?" reaction. I've witnessed it before but haven't first hand had a student bummed that I was teaching. I crushed the class and had great feedback but still let the disappointment of said student get to me. It's not that I felt a personal attack but that my ego was hurt. I've been teaching for 3 years but still have a lot to learn. When we let our confidence turn to cockiness, we let our egos get the best of us. Stay humble friends. We're all students in this life.


Recipe of the Day: Italian Beef Sandwiches (Serving size 4)

1.5 lb beef chuck cut into slices

3 cups chicken broth

4 cloves garlic diced

1 tbsp rosemary

1 tbsp thyme

2 tsp oregano

2 tsp crushed red pepper

Salt and pepper to taste

4 ciabatta rolls

1 cup giardiniera peppers (I used homemade. Recipe to come)


Add ingredients to pressure cooker and cook for 15 minutes or until meat is easy to pull apart. Heat up ciabatta in over until golden brown. Put meat and giardiniera in sandwich. Option to serve au jus with beef juice. Serve hot and enjoy!
