#FitFebruary Day 3

I've been learning so much about myself. I found irritation during my practice today which followed me to lunch break. I wanted to sit in my car to eat so I could shut down but decided to eat with those in training who stayed behind. I felt more support and community in that lunch than I have all weekend. It's the moments that we want to shut out the world that teach us something. We all need space and "me time" but I would recommend putting yourself out there when you need support most. I think in this day and age, we want to do everything ourselves but it's that mindset that isolate us from the community around us.

There's your life sprinkle for the day. Today held a 2 hour practice of flowing, breathing, and meditating.

Recipe of the Day:

Leftover Quesadillas

Disclaimer: I had tacos last night and heated up the leftover filling separately.

1 Mission Supersoft Flour Tortilla

1/4 cup shredded taco cheese

1/4 can of Kuner's vegetarian refried pinto beans with fire roasted chiles

1 hearty sprinkle of taco seasoning

2 cups leftover taco fillings

Any dipping sauce you'd like to use. I used Hope Spicy Avocado hummus!

I combined cauliflower, onions, green peppers, ground turkey, black beans, and radishes with taco seasoning and hot sauce yesterday for tacos. I had left overs and thought this would be the perfect way to use them. I personally like to put cheese on one half and refried beans on the other with taco seasonings sprinkled on top.

I warmed up the fillings separately so the tortilla shell wouldn't burn then added them on top of the shell, which helped melt the cheese. Turn the stove on low until the outside of the shell gets crispy. Fold in half and serve!
