#FitFebruary Day 6

Woof. Today was a day. All of the sparkles from my weekend are slowly turning back into reality but I'm holding on for dear life. My intention necklace is the one thing that brings me back to the moment. I wasn't able to take a class today (part of my insanity) but got home and took some me time to cook and flow. FitFeb is putting me in my place yet!


Recipe of the Day:

Mexican potato slop. Recipe below!





One Pan Mexican Potato Slop : 2 servings

1/4 cup breakfast meat of choice (I used sausage links but chorizo is best!)

1/4 red onion chopped

6 cups frozen shredded potatoes

2 tbsp olive oil

1 cup Hatch Valley Green Chili

2 tbsp sliced jalapeno chopped

2 tbsp Hope Spicy Avocado Hummus






Simmer onion in olive oil for flavor then add potatoes until thawed. To cut down on dishes, I scoot the potatoes over and cook the meat on the side of the pan then mix into potatoes when cooked.





Mix in green chili then add jalapeno and hummus.


Super filling dish for mornings that require high energy.
