Greek Rice Pilaf and Breaded Chicken

I helped teach a module for our Yin training this weekend and it was really inspiring. Teaching teachers put me in a new seat and opened my eyes to the vast world that is yoga. It also put my insecurities in my face and made me find courage to speak from experience and from my heart. Being humbled is my favorite.


Recipe of the Day : Greek Rice Pilaf and Breaded Chicken (4 servings)

45 minutes total

Breaded Chicken:

1 lb chicken breast cut into cutlets

1 cup Italian bread crumbs

1 egg

1 tbsp olive oil


Cover chicken pieces with plastic wrap or wax paper and pound until paper thin. Cover bottom of pan with olive oil. Put egg in one bowl and bread crumbs in another. Dip chicken into egg, followed by bread crumbs and place in pan. Fry until fully cooked.



Greek Rice Pilaf:

1 box Rice Pilaf cooked

1 cup lentils cooked

1 Roma tomato diced

1/2 cucumber diced

1/4 can chick peas

1/4 yellow onion diced

1/4 cup sliced kalamata olives

2 tbsp olive oil

2 tsp lemon juice

1 tbsp balsamic vinegar

1 tsp celery salt

1 tsp garlic powder

1 tsp paprika

1 tsp Italian seasoning

Salt and pepper to taste

Optional dollop of red pepper hummus


Follow directions for Rice pilaf and lentils, keep covered and set aside. Sauté onion and tomato in olive oil. Add chick peas and seasonings to pan. Place cucumber in bowl and mix with red wine vinegar and celery salt. Combine all ingredients into rice pilaf and drizzle kalamata olive juice for flavor. Option to scoop spoon full of hummus on top to make concoction creamy! Serve on the side of chicken! Pilaf can be served hot or cold.
