Italian Jumbalaya

I skipped town this weekend to Breckenridge and as always, the altitude brought on a migraine. My boyfriend was a hero and drove me around to get medication, Pedialyte and an IV. We both felt defeated after hours were wasted and considered leaving the mountains but instead we turned our attitudes around and had the best time. We left feeling refreshed and closer than ever. It's easy to let things bother you to the point of exhaustion but if you choose to switch it around, the possibilities for amazing memories open up to you.

Recipe of the Day : Italian Jumbalaya (4 servings)

1 hour cook time

2 cups cooked rice

1 lb ground Hot Italian sausage

1 jar tomato sauce

2 bell peppers diced

1/2 yellow onion diced

1 tbsp olive oil

2 tsp Italian seasoning

2 tsp garlic powder

1 tsp red pepper flakes

Salt and pepper to taste

Cook Italian sausage until browned then transfer into separate vessel. Add olive oil to meat juice and cook peppers and onion until soft. Add tomato sauce, seasonings, and Italian sausage to sautéd vegetables then cover and simmer for 15 minutes. Mix rice into concoction and serve hot!
