Low-carb Enchiladas

My week continually surprised me with changes and lessons. I was met with many moments of conflict and stress but made it through to the other side stronger and more patient. That's not to say I didn't hide under my desk to shut the world out for a few breaths, but I was reminded how powerful our breath is and how filling your lungs can change the outlook on your day.

Recipe of the Day: Low-carb Enchiladas (servings 5 enchiladas)

1 lb ground turkey

5 soft burrito shells

1 cup shredded Mexican cheese

1 red bell pepper diced

1/2 head of cauliflower diced

3/4 red onion diced

1 jalapeno minced

1/4 green chile sauce

10 oz jar enchilada sauce

1/4 cup water

1 tbsp olive oil

1 tbsp garlic powder

1 tbsp taco seasoning

Salt and pepper to taste

Preheat oven to 350 degrees. Cook turkey in olive oil until browed and then place to the side. Cook cauliflower in water and when starts to soften add pepper, onion, jalapeno, green chile sauce and cover. When fully cooked add garlic powder, taco seasoning and salt and pepper then mix until fully incorporated. Cover bottom of cookie pan with enchilada sauce. Fill burrito shells with filling and double over edges to create enchilada shape. Repeat 4 times. Cover enchiladas with rest of sauce and top with cheese. Bake for 30 minutes or until cheese melts. Serve hot and enjoy!
