
Winter Chicken and Spinach Soup
In about a weeks time, we found a new place to live, signed the lease, moved in and unpacked. We knew we wanted to get a little farther out from the city and found the perfect opportunity. Sometimes life hands you the perfect lemon but at what seems to be the wrong time. I just keep finding trust in the process and it always works out.

Recipe of the Day : Winter Chicken and Spinach Soup (4 servings)
45 minutes prep and cook time
2 boxes vegetable broth
1 chicken breast
4 stalks of celery slivered
2 roma tomatoes diced
2 cups fresh spinach
1 cup lentils
1 can cannellini beans
1/4 red onion diced
1 tbsp Italian seasoning
1/2 tbsp celery salt
1/2 tbsp garlic powder
Start with the broth, chicken, and lentils in the pot (I used a pressure cooker to save time.) Once the chicken seems almost fully cooked, add the celery and seasonings. When the lentils are cooked, add the tomatoes and beans. Let simmer for flavoring and serve hot!
