Vegan Potato Salad

I went to one of my oldest friend's weddings this past weekend and experienced all of the feels. It seemed as if a chapter is ending. Of course, new ones are constantly beginning but to watch a sister-friend walk down the aisle (right before moving to Japan, I should add) brought on some closure. Closure that my childhood has ended, that our relationship has changed, and that my journey isn't even close to what I thought it would be even 5 years ago. Time for reflection is so important in life.


Recipe of the Day : Vegan Potato Salad (4 servings)

45 minutes total


6 red potatoes

4 stalks of celery diced

1/4 red onion diced

1 cup veganaise

1/4 cup white vinegar

1 tbsp dijon mustard

2 tsp garlic powder

1 tsp celery salt

1 tsp dill



Bring water to boil in pot then boil potatoes until fork easily goes right through. Drain, run cold water through to stop them from cooking, and cut into bite-sized pieces.

Meanwhile, mix white vinegar, mustard, garlic, celery salt, and dill in separate bowl. Place potatoes, celery, onion, and veganaise in large bowl. Add liquid mixture and mix until fully incorporated. Serve chilled and enjoy!
