Breakfast Potatoes

I'm so excited for Fall. Fall brings changes through nature, outfit choices, latte flavors, and more. Currently going through a transition myself, I'm ready for the environment to mirror that. Growing up in the east coast meant apple picking, pumpkin seeds, apple cider donuts, and amazing leaf colors. Although Colorado doesn't offer that on the same level, change is in the air and you can feel it!


Recipe of the Day : Breakfast Potatoes (2 servings)

25 minutes cook and prep time

10 fingerling potatoes sliced thin

1 cup broccoli cut into small pieces

1/4 red onion diced

2 stalks of kale ripped into pieces

1 tbsp olive oil

1 tbsp sea salt

1 tbsp garlic powder

1 tbsp Cajun seasoning

2 tsp Paprika

After the prep, this process is super easy and allows you to keep your morning going with minimal work. Place oil and onions into pan and cook on low-medium heat until onions start to sizzle. Add potatoes, broccoli, kale and sea salt into pan then cover for 15 minutes (flipping randomly during 15 minutes.) Add garlic, Cajun seasoning, and Paprika for last 10 minutes and let simmer so the flavor really sticks to the food. Serve hot and enjoy!
