Italian Casserole

Italian Casserole (6 Servings)

45 minute prep + cook time


3 cups cooked white rice

1 cup giardiniera

1 cup fresh spinach

1/2 cup olive oil

1/2 stalk of asparagus

1/2 cup cauliflower cut into pieces

1/4 cup broccoli cut into pieces

1/4 red onion sliced in slivers

1/4 cup ricotta

1/2 cup breadcrumbs

1 tbsp garlic powder

2 tsp Italian seasoning

Salt and pepper to taste

Preheat oven to 400 degrees. Cover the bottom of a pot with olive oil and add the onion. Once it starts to sizzle, add asparagus, broccoli, and cauliflower. Add garlic powder, Italian seasoning, salt and pepper then cover and cook until cooked. Add spinach and giardiniera and cover on low heat for another 3 minutes. Add in rice and ricotta and mix thoroughly.

Transfer into casserole baking ware and cover with breadcrumbs. Bake for 10 minutes or until breadcrumbs are browned. Serve hot and enjoy!
