Sphinx Pizza

Picture waking up every morning just waiting for your death. Morbid yes. But this way of living is similar to showing up for a yoga class just to get to savasana. We get so distracted by the busy-ness around us that we lose control in our lives. We want that peace, that light at the end of the tunnel but by looking at the destination we lose the journey. The way a sunset makes us feel, the warmth of a hug, the flavors of your favorite dish. If we could apply these small moments of gratitude in everything we did, savasana wouldn't be the only good part, it would just be a dope stop on the journey of life train. Speaking of favorite dishes...



Recipe of the Day : Sphinx Pizza (Serving 8 slices)

Pizza dough

10 oz Sabra Roasted Pine Nut Hummus

1 cup shredded mozzarella cheese

1/2 cup ricotta cheese

1 cup kale

2 tbsp sun-dried tomatoes diced

1 tbsp lemon juice

2 tsp garlic powder

2 tsp Italian seasoning

1 tsp red pepper flakes

Salt to taste

*For the meat eater optional 1/2 lb ground hot Italian sausage cooked


Preheat oven to 500 degrees. Rip up kale into small pieces and soak in lemon juice for about 5 minutes. Lightly oil pizza pan then roll out dough to edges. Add hummus and evenly spread. Sprinkle garlic powder and salt across pizza. Add sun-dried tomatoes then cover with mozzarella cheese. Slap small dollops of ricotta cheese randomly throughout, then add kale, Italian seasonings and red pepper flakes to the top. Bake for 10 minutes and enjoy!

Note: I cooked the sausage separately then added at the end so it didn't add an overwhelming flavor.
