Tofu Bahn Mi (4 servings)
1 hour and 15 min prep + cook time
Ingredients
Pickled veggies - start first!
1 carrot diced
1 stalk of celery diced
1/4 cup cauliflower diced
1/4 cup cucumber diced
1/4 yellow onion diced
1 tbsp diced jalapeno
3/4 cup white vinegar
1/4 cup water
2 tbsp salt
1 tbsp garlic powder
1 tbsp dill sesasoning
1 tsp sugar
Add everything in a jar, mix and close tightly. Refrigerate for at least 1 hour. The longer you let it sit, the more flavor it gets!
Bahn Mi
1 package firm tofu
4 hoagie rolls (or baguette!) toasted
1 avocado
1 cup soy sauce
2 tbsp chili garlic sauce
1 tbsp olive oil
1/2 tbsp garlic powder
1/2 tbsp ginger powder
1/2 tbsp lime juice
Drain tofu, cut into 1/2 in. slices and pat dry. Cover bottom of pan with olive oil then add tofu. Cover tofu with soy sauce, chili garlic sauce, garlic, ginger and lime juice. Cover and cook on low heat to allow flavoring to marinate tofu. After 5 minutes, uncover and sear until browned. Flip over and cook second side.
Spread avocado on hoagie roll then add tofu. Top with pickled veggies and enjoy!
