Broccoli Pasta

45 min prep + cook time

Ingredients:

1.5 cup chopped broccoli

6 garlic cloves diced

1/4 cup olive oil

1 ladle of salty pasta water

1 tbsp salt + salt for pasta water

1 tbsp pepper


Optional

2 tsp chili powder

A bunch of pecorino romano cheese


Cover bottom of pot with olive oil then add garlic. Once garlic is simmering, add seasonings then broccoli. Cover and cook on low/medium heat until broccoli is tender. Meanwhile, fill second pot with water and once boiling add salt and desired pasta. Cook until al dente, then place strainer on top of a large bowl to capture the pasta water. Chop broccoli into small pieces with a spatula then add salty pasta water. Mix until combined then add pasta into the pot. Mix again and add in more of any ingredients you think it needs to taste (sometimes the pasta water isn't salty enough or you want more spice, etc. This is where you'd add in the cheese!) Serve hot and enjoy!
