Greek Inspired Bowl

Greek Inspired Bowl (4 servings)

20 min prep + cook

Ingredients :

For base:

1/2 cup white rice

1/2 cup lentils

1/2 cup feta cheese

1 tbsp red wine vinegar

1 tbsp dijon mustard coarse ground

1 tbsp garlic powder

1 tsp cayenne pepper

Salt and pepper to taste


Put rice, lentils, and 2 cups of water into a pot and bring to a boil. Cover pot and lower heat between medium and low. Once both are cooked and water is absorbed, mix in rest of ingredients and place to the side.


For veggies:

2 cups broccoli cut into smaller pieces

1 tbsp lemon juice

1 tsp garlic powder

Salt and pepper to taste


Cover bottom of a pan with oil. Cook until broccoli is slightly browned.


2 cups brussel sprouts cut into thin slivers

4 garlic cloves sliced thinly

1 tsp paprika

1 tsp cayenne pepper

Salt and pepper to taste


Mix all ingredients in a bowl with 2 tbsp olive oil. Put into an air fryer on vegetable option (or oven at 400 degrees) until cooked thoroughly with a light crisp.


Add all ingredients to bowl with any final toppings - we had radishes and olives - and enjoy! The flavors will get cha!
