Paneer Masala
1 hour prep + cook time (4 servings)

Ingredients:
For the masala
8 oz canned puréed tomatoes
2 tbsp garlic powder
1 tbsp turmeric
2 tsp red pepper chili flakes
2 tsp cumin
1 tbsp ginger powder
2 tsp cayenne powder
2 tbsp onion powder
2 tbsp salt
1/4 cup coconut milk
1/4 cup heavy whipping cream
2.5 cups fresh spinach chopped
For paneer
2 tbsp olive oil
1 package of paneer chopped
1 tsp red pepper chili flakes
1 tsp coriander
1 tsp cumin
1 tsp turmeric
Start cooking rice and set aside. Add tomatoes and all of the dry seasonings to a pot. Mix, cover and cook until simmering. Then add coconut milk and heavy cream, mix, cover, and bring back to a simmer. While waiting, add olive oil, paneer and seasonings into a new pan. Cover and cook until paneer is browned. Set aside. Add spinach to masala, mix to incorporate and move off the heat to thicken the sauce. Sauce should thicken within 10-15 minutes then add paneer.
Serve masala over rice and enjoy!
