Lectin Free Breakfast Hash Browns (4 servings)
30 min prep and cook time
Ingredients:
1 sweet potato shredded
1/4 red cabbage diced
1 shallot onion diced
1 cup baby bella mushrooms diced
1 handful of radishes sliced thinly
2 tbsp olive oil
2 tbsp Holy Cow BBQ Rub
1 tbsp salt
Cover bottom of pan with olive oil. Add shallot and cook on medium until shallots brown. Add rest of vegetables salt, and Holy Cow seasonings, cover and cook for 15 minutes. Take pan top off, cook on medium until bottom starts to brown. Serve hot and enjoy!
