Asparagus Couscous

Asparagus Couscous (3 servings)

45 min prep + cook time


Ingredients:

1 box Couscous (I used Near East Toasted Pine nut)

1 stalk fresh asparagus diced

1/4 yellow onion diced

2 cups cherry tomatoes

1 tbsp minced garlic

1.5 tsp olive oil

1.5 tsp balsamic vinegar

Salt and pepper to taste


Preheat oven to 375 degrees. Follow the directions on the couscous box for best results then leave in covered pot. Oil the bottom of aluminum foil or cookie sheet. Place asparagus, onion, and tomatoes into separate sections. Drizzle balsamic vinegar over just the tomatoes and the garlic over just the asparagus. Bake for 20 minutes or until tomatoes are about to pop.

Mix everything together in the pot with ideal salt and pepper. Serve hot and enjoy!
