Vegan Strawberry Cookies
30 min prep + cook time (it will need an hour to sit in the fridge also)
Ingredients:
2 cups flour
2 cups granulated sugar
1 cup strawberries
3 tbsp cornstarch
1 tsp baking powder
1/2 cup vegan butter melted
1 tbsp salt
1 tbsp vanilla extract
1/4 cup milk
Blend strawberries with 3/4 cup sugar until becomes a liquid then boil and mix until becomes a syrup. Strain the liquid out of the strawberry chunks and set aside. Mix flour, 1 tbsp cornstarch, baking powder. and salt together in mixer. Then slowly add in butter and rest of sugar. Combine 2 tbsp cornstarch with 3 tbsp water and mix to make a milky consistency. Mix in cornstarch, butter, vanilla extract, milk, and strawberry juice until fully incorporated. Set dough in fridge for an hour. Preheat oven to 325 degrees. Make small one inch around balls, place 3 in apart and bake for 30 min. Enjoy!
