Plantain Picadillo

Plantain Picadillo

30 min prep + cook time (2 servings)

Ingredients:

2 plantains diced

2 Beyond Meat burgers chopped

1/4 cherry peppers diced

2 cups cooked rice

1/4 cup salsa

2 tbsp coconut oil

1 tbsp garlic powder

1 tbsp salt

1 tsp cayenne pepper

1 tsp hot sauce


Add oil and cherry peppers to a pan and sauté for 2 minutes on medium heat. Cook plantains in oil with garlic, cayenne pepper and salt until browned. Cook Beyond Meat in olive oil separately and chop into small pieces with a scapula. Add meat to plantains and mix with salsa. Serve with rice and enjoy!
