Breakfast Quesadillas

I’ve noticed lately that students have been staying connected to the outside world while in class (i.e checking their phones, apple watches, etc) and it hurts my soul a little. This practice is for self growth, self care, and mental stillness. Have we come to a point where even an hour is too long to tap out? I get our world is moving towards complete connection in every way possible but we all need moments to ourself. Let’s work in that direction!


Recipe of the Day : Breakfast Quesadillas (2 servings)

30 minutes total


2 flour burrito wraps

1/2 cup shredded taco cheese

1/2 cup cooked soyrizo (or chorizo)

1 bell pepper diced

1/4 red onion diced

1 tbsp taco seasonings

1 tbsp olive oil

Salt and pepper to taste



Sauté peppers and onions in soyrizo pan to get flavoring, then add salt and pepper. Place open burrito wrap on pan, cover with cheese and taco seasoning. Evenly disperse peppers and onions on one half of the open quesadilla. Cook on low heat until cheese starts to melt. Fold in half and cook both sides until lightly browned. Cut in half or thirds and enjoy! I dipped mine in salsa.
