
Broccoli Quinoa Casserole
I used to be a very insecure person. My insecurities showed up in the form of jealousy and judgement. I would find myself thinking negatively towards strangers which would then make me feel even worse about myself.
It wasn't until I took responsibility for the negativity in my life that I started to transform the way I show up. Every time I would find myself thinking a negative thought about someone or something I would immediately follow it with a positive complement. The more I did it, the less the negative thoughts came to mind and the more the positive thoughts took completely over. I felt better about myself when I would give love and that spiraled into even more positivity in my life. When I find myself getting negative, I start with this technique. I find things I'm grateful for and that turns into self love and support from the Universe. I dare you to try it!

Recipe of the Day : Broccoli Quinoa Casserole (5 servings)
45 minutes total
2.5 cups of quinoa
2 heads of broccoli cut into small pieces
1/2 yellow onion diced
4 cups vegetable broth
3 cups fresh spinach
1.5 cups mozzarella cheese
1/2 cup parmesan cheese
1/2 cup mozzarella cheese
3 tbsp pesto
1 tbsp garlic powder
1 tbsp olive oil
1 tsp celery salt
2 tsp cornstarch
Salt and pepper to taste
Preheat oven to 400 degrees. Drizzle olive oil to cover bottom of pan then sauteé broccoli, onion, 2 tsp garlic powder and celery salt until cooked. In a separate pot bring vegetable broth to a boil with pesto, 2 tsp garlic power, cornstarch, and salt. Add all ingredients except the broccoli + onion in a 9x13" baking dish and bake for 30-35 minutes or until the quinoa is cooked. Add the broccoli mix in, sprinkle the last 1/2 cup of mozzarella cheese on top and broil for 5 additional minutes.
Serve hot and enjoy!
