This parsley pasta dish is inspired from the meal Jon Favreau cooks Scarlett Johansson in the movie, Chef. I've added some veggies into the original recipe and it's just as good as it looks on the big screen. (If you haven't seen the movie, watch it now!)
Parsley Pasta (4 servings)
35 min prep and cook time
Ingredients:
1 lb linguine
1 lemon
1 cup chopped parsley
1 cup spinach
1 cup diced mushrooms (I used baby bella)
3 cloves of garlic thinly sliced
1 cup olive oil
3 tbsp butter or butter alternative
4 tbsp salt
1 tbsp Italian seasoning
2 tsp red pepper flakes
1 tsp black pepper
Parmesan cheese
Bring water to a boil and add 2 tbsp salt. Add pasta and cook for recommended time. Meanwhile, cover bottom of pan with olive oil. Once oil is hot, add cloves of garlic, Italian seasoning, red pepper flakes and black pepper. Simmer until garlic is bronzed, then add butter, parsley, spinach and mushrooms. Once veggies are cooked, pour over drained pasta (back in the pot) and add rest of salt and parmesan cheese. Mix thoroughly and serve hot. You can add more cheese on top if you'd like! Enjoy!
