Chimichurri Rice

Chimichurri Rice (4 servings)

25 min prep and cook time

Ingredients:

2 cups of white rice

1/2 cup finely chopped parsley

1/4 cup olive oil

2 tbsp finely chopped shallots

2 tbsp red wine vinegar

1 garlic clove finely chopped

1/2 tsp red pepper flakes

1/2 tsp Salt


Bring 4 cups of water to boil and add in rice. Cover and cook on low heat until fully cooked. Place all ingredients for chimichurri in food processor and run until well incorporated. Mix chimichurri into rice, serve hot and enjoy!
