Gut Happy Stir Fry

February can be full of hearts and fuzzy, warm feelings but sometimes it gets a bad rep when we feel alone. My goal for you this month is to practice SELF LOVE. Where can you create more time and space to send your gifts inward? To fill your cup? Maybe that shows up in a day off to slow down or a yoga class fit into your busy schedule. You're amazing and you deserve to send all that love you're giving inward!

Recipe of the Day : Gut Happy Stir Fry (4 servings)

45 min prep and cook time

Ingredients:  2 cups cooked rice 1 shallot onion diced 1.5 carrot sliced 1.5 pieces of celery sliced 1 cup broccoli florets chopped 1 cup spinach 2 shiitake mushrooms diced 2 tbsp olive oil 2 tbsp red wine vinegar 1 tbsp garlic powder 1 tbsp salt 2 tsp cayenne pepper 2 tsp ginger

**Option to add kimchi for additional flavor!

Cover bottom of pan with olive oil. Add shallot and carrots. Cook on medium until shallots brown. Add rest of vegetables and salt, cover and cook for 5 minutes. Add rest of seasonings and vinegar, mix thoroughly, cover, and cook for another minute or two. Add vegetables on top of rice. Option to add kimchi on top if you choose.
