Gut Happy Stir Fry (4 servings)
45 min prep and cook time
Ingredients:
2 cups cooked rice
1 shallot onion diced
1.5 carrot sliced
1.5 pieces of celery sliced
1 cup broccoli florets chopped
1 cup spinach
2 shiitake mushrooms diced
2 tbsp olive oil
2 tbsp red wine vinegar
1 tbsp garlic powder
1 tbsp salt
2 tsp cayenne pepper
2 tsp ginger
**Option to add kimchi for additional flavor!
Cover bottom of pan with olive oil. Add shallot and carrots. Cook on medium until shallots brown. Add rest of vegetables and salt, cover and cook for 5 minutes. Add rest of seasonings and vinegar, mix thoroughly, cover, and cook for another minute or two. Add vegetables on top of rice. Option to add kimchi on top if you choose.
