Lentil Soup

I finally came to the conclusion that I'm deep down a very happy person. It's the vanity of life, the small stresses, that overtake my innate gratitude. I have an amazing family, a super loving fiancé, the cutest bunny children ever, and really love my job. I live in a state that provides me with nature AND things to do. I have access to healthy, fresh food. But the poison of stress is like the oil on top of the water that is my happiness. What distracts you from being happy?



Recipe of the Day : Lentil Soup (6 servings)

30 minutes prep and cook time


6 cups vegetable broth

1 box pasta

1 sweet potato peeled and diced

1 1/2 cup dry lentils

1 cup arugula

1/2 cup water

1 tbsp olive oil

1/4 onion diced

2 tbsp salt or celery salt

1 tsp garlic powder

1 tbsp basil

1 tsp thyme

1 tsp red pepper flakes


Put olive oil in bottom of pot with onions and sauté on high heat. Add broth, water, and lentils into pot and bring to a boil. Reduce to medium heat and cover. Add pasta, potato and seasonings. When pasta is al dente, add arugula and cook until pasta is done. Serve hot and enjoy!
