Simple Ramen

I can't tell you what this spring weather is doing for me. It's supposed to snow tomorrow so I know nothing is forever but we have tulips coming up and birds chirping in the mornings! I don't have much more to say other than I'm feeling more myself these days.



Recipe of the Day : Simple Ramen (4 servings)

45 minutes prep and cook time


4 cakes of Ramen (for a healthier meal make sure it's rice Ramen)

2 lbs or 32 oz vegetable broth

1 cup edamame

1/2 cup frozen spinach

1/4 cup soy sauce

1 tbsp olive oil

1 tbsp ginger

1 tbsp garlic

1 tbsp salt (if low sodium soy sauce is used)


Optional : hard boiled egg + kimchi


Add the oil to the bottom of the pot and heat up, then add broth and bring to a boil. Add edamame, spinach, soy sauce, and seasonings and cook on medium heat for 5 minutes or until edamame floats to the top. Then add Ramen noodles and cook for amount of time on package (usually no longer than 8 minutes.)


I don't eat eggs but my fiancé added 2 hard boiled eggs to his for a more traditional flare and then we both added store bought organic Kimchi for extra spice. Serve warm and enjoy! Don't forget the chopsticks!
