Thai Green Curry Stir Fry

Vegan Thai Green Curry Stir Fry (5 servings)

30 min prep and cook time

Ingredients:

2 cups cooked rice

1 shallot onion diced

3 carrots sliced and halved

2 cups cauliflower cut into small pieces

1 cup broccoli florets chopped

1 cup pickled baby corn cut into thirds

2 tbsp olive oil

1 can coconut milk

1 cup vegetable broth

1 tbsp maple syrup

2 tsp ginger

2 tbsp green curry paste (I used Thai Kitchen green curry paste)

1 tbsp garlic

Salt to taste


Cover bottom of pan with olive oil. Add shallot and vegetables. Cook on medium until veggies get softer. Add ginger, garlic and salt, mix thoroughly, cover and cook for 5 minutes. In a separate pot, bring vegetable broth and coconut milk to a boil. Drop heat to low, add maple syrup and curry and cook for another 5 minutes. Add vegetables on top of cooked rice, then pour curry over top to your liking. Serve hot or cold and enjoy!
