Vegetarian Jumbalaya

Vegetarian Jumbalaya (6 servings)

45 minute prep + cook time


3 cups cooked white rice

4 Beyond Meat Italian Sausages

1 cup chopped broccoli

1/2 cup diced mushrooms

1/2 red onion sliced

1 jar marinara sauce (or homemade)

1/2 cup olive oil

1 tbsp garlic powder

2 tsp Italian seasoning

Salt and pepper to taste

Cover bottom of a pot with oil and add onions until they simmer. Add in Italian sausage, broccoli, and mushrooms. Add seasonings, cover and let simmer until vegetables are cooked. Cut the sausage into smaller pieces, add white rice and cover with marinara sauce. Cover and cook on low heat for another 5-8 minutes. Serve hot, add parmesan cheese if you'd like and enjoy!
