Vegetarian Pesto Lasagna

Vegetarian Pesto Lasagna (6 servings)

1 hour prep + cook time

Ingredients:

1 box lasagna pasta

6 roma tomatoes

1 cup of pesto

1 pack of Beyond Meat Italian Sausage

1 package of Beyond Meat ground beef

1 cup Mozzarella Cheese

16 oz ricotta cheese

2 tbsp Italian seasoning

2 tbsp garlic powder

1 tsp red pepper flakes

Salt and pepper to taste


Preheat oven to 375 degrees. Blend Roma tomatoes with 1 tbsp garlic, 1 tbsp Italian seasoning, salt and pepper. Cook both the Italian sausage and ground beef in a pan with remaining garlic, Italian seasoning, red pepper flakes, salt and pepper until brown. Set aside. Mix pesto thoroughly into ricotta. Pour some sauce to cover the bottom of a baking pan. Place enough lasagna pasta to cover bottom of pan. Add a layer of meat to cover pasta and cover with pesto ricotta. Add another layer of pasta, add meat and more pesto ricotta. Add one final layer of pasta, cover with remaining sauce (get sauce around edges of lasagna too!), cover top with mozzarella and bake for 15 minutes or until cheese is melted and lightly brown. Serve hot and enjoy!
