I normally don't bake sweets since, personally, I'd drink salt before eating something sweet but every now and then you have to indulge. Plus, it's my fiancé's birthday so I had to have something to stick a candle (stick of incense was all I had) in!
Recipe of the Day : Apple Almond Cupcakes (12 servings)
Prep and cook time 45 minutes
2 eggs
1 2/3 cup all purpose flour
1 cup apple cider
2/3 cup sugar
1/2 cup melted butter
2 tbsp baking powder
1 tsp cinnamon
1 tsp almond extract
1/2 tsp salt
Frosting:
3 cup cane sugar
3/4 cup melted butter
1/2 cup light brown sugar
1/4 cup milk
1 tsp cinnamon
1 tsp almond extract
Preheat oven to 350 degrees. Mix the butter, eggs, almond extract and sugar in a bowl. Add salt and baking powder to the mix then, alternate adding cider and flour to the mix a little at a time. Whisk until fully incorporated. Wipe olive oil in each cupcake hole then add batter until almost at the top line. Bake for 20-30 minutes.
For the frosting, whisk everything together until fully incorporated. Microwave for 1 minute to melt the cane sugar then put in the freezer. Move the bowl around every couple minutes and once the frosting moves slowly, it is good to come out!
Let the cupcakes cool down then add the frosting and enjoy!
