Enchilada Sauce

Life is hard. In so many different ways and for all of us it is hard. So just do the best you can and know that we're here for you and we're all in this together!

Recipe of the day : Enchilada sauce (6 servings)

20 minutes prep and cook time

1 cup water

1 tbsp olive oil

1 Roma tomato chopped

1/4 red onion diced

1 can Rotel diced tomatoes HOT

1/4 cup cilantro chopped

2 tbsp diced garlic

1 tbsp chili powder

2 tsp cumin

Salt and peppe to taste

Salt and pepper to tastes to bottom of pot and cook until simmering on medium heat. Add Rotel, all other seasonings and water then bring to a boil. Add cilantro and Roma tomato, cover and cook on low until all incorporates. Pour evenly on top of enchiladas, bake for 20-30 minutes on 350 degrees and enjoy!
