Fried Eggplant

It's been so long since I've been on here! I've been in the planning stage for most things in my life and still haven't really settled to the ground. I did watch Julie & Julia which was really interesting to see, kind of, where the food blog madness came from. Did you know Julia Child never wanted to meet Julie? She basically thought what she was doing was tacky. I truly don't care that much but would hate to be Julie in that situation - she really loved Julia. Anyways, onto the fried eggplant.



Recipe of the Day : Fried Eggplant (2 servings)

Prep and cook time 30 minutes

1 whole eggplant

1 egg

1 cup breadcrumbs (I use the Italian seasoning ones!)

1 tbsp salt

1 tbsp olive oil


Pour the olive oil to cover bottom of pan and heat up on medium heat. Slice the eggplant into thin slivers. Crack egg into a bowl and break yolk with a fork. Pour salt and breadcrumbs into separate bowl. Dip eggplant first into the egg, then into the breadcrumbs. Cook, covered, on both sides until brown. For the last couple of minutes turn the heat down to simmer to really cook the inside. Serve hot with a dipping sauce of your choosing and enjoy!
