Green Soup

Green Soup (4 servings for dinner, 6 for app)

45 min prep and cook time

Ingredients: 2 cups vegetable broth 2 cups spinach 1 sweet potato cut into small pieces 1 cup kale sliced 1 cup broccoli chopped 1/2 red onion cut into chunks 1/4 cup scallions 2 tbsp cilantro 3 tbsp vegetable oil 2 tbsp garlic 1 tbsp red pepper flakes 1 tbsp thyme Salt and pepper Cover bottom of pot or dutch oven with olive oil. Add onions, scallions, red pepper flakes, 1 tbsp salt, thyme and garlic. Sauté on medium until onions start to cook. Add spinach, broccoli, and kale and sauté until veggies start to cook down. Add vegetable broth, 2 tbsp salt, pepper and bring to a boil.


Using either a hand blender or regular blender, blend concoction until broth becomes thicker and veggies are incorporated throughout. Place broth back in pot and add sweet potatoes. Bring back to a boil for about 10-15 minutes, or until potatoes are fully cooked. Serve hot with cilantro garnish on top and enjoy!
