Hemp Seed Vegetable Bowl (4 servings)
45 minute prep + cook time
Ingredients:
2 cups cooked white rice
2 handfuls fresh spinach
1 portabello mushroom cap diced
1 cup chopped asparagus
1 cup chopped cauliflower
1/2 cup pesto
2 tbsp hemp seeds
1 cup olive oil
1 tbsp salt
1 tbsp garlic powder
Cover bottom of a pot with oil and add asparagus, mushroom and cauliflower until they simmer. Add in spinach and hemp seeds with pesto and seasonings, Cover and cook on low heat.Serve hot, add parmesan cheese if you'd like and enjoy!
