Lentil Cauliflower Fritters

Lentil Cauliflower Fritters (4 servings)

30 minute prep and cook time

Ingredients:

1 1/2 cups chopped rice cauliflower

1 1/2 cups cooked red lentils

1 egg

1/4 red onion chopped

2 tbsp chickpea flour

3 tbsp olive oil

1 tbsp salt

1 tbsp grated Parmesan cheese

1 tbsp Italian seasoning

1 tbsp garlic

1/2 tbsp Paprika


Mix cauliflower with egg, onion and salt in a mixing bowl. Put 1 tbsp olive oil and lentils in a food processor and pulse until it becomes chunky paste. Add paste into cauliflower mix with rest of seasonings. Fully incorporate. Put other 2 tbsps at the bottom of a pan and heat up oil until boils. Make patties with mixture and cook on both sides until golden brown. Cover pan if insides aren't fully cooked. Eat hot with or without dipping sauce of your choosing!
