Saag Paneer (4 servings)
1 hour prep + cook time
Ingredients:
3 cups cooked rice
3 cups fresh spinach chopped
1.5 cups store bought masala
1/2 cup plain Greek yogurt
2 tbsp olive oil
1 thumb size ginger peeled and diced
6 cloves garlic diced
1 tbsp onion powder
1 package of paneer cubed
1 tbsp turmeric
1 tbsp red pepper flakes
2 tsp cumin
2 tsp coriander
1 tbsp Salt
Cover bottom of deep pan with a tbsp of olive oil. Add ginger, garlic, onion powder, and a sprinkle of salt and cook until mixture turns light brown. If spices start to dry up, add a tbsp of water and mix well.
Meanwhile, put tbsp of olive oil in a bowl with paneer, turmeric, pepper flakes, cumin, and coriander. Mix thoroughly and let marinate.
Add masala to the pot and 1/2 cup of water then mix well and let cook for another 2-3 minutes on medium heat. Add spinach and rest of salt and let cook until spinach cooks down. Add paneer and yogurt, cover and cook for another 5 minutes on low heat. Add rice, mix until incorporated, recover and cook for another 5 minutes. Serve hot and enjoy!
