Utica Pizza (6 servings)

Ingredients:
Dough Ingredients:
6 cups all-purpose flour
2 1/4 warm water
1/3 cup olive oil
2 tbsp salt
1 tsp sugar
1 package Active Dry Yeast
Optional 2 tbsp finely grate romano cheese
Sauce Ingredients:
28 oz can San Marzano tomatoes
4 garlic cloves slivered
1 tbsp olive oil
1 tbsp Italian seasonings
2 tsp salt
Optional 2 tbsp finely grate romano cheese
Dough:
Combine 1/4 cup of hot water with package of Active Dry Yeast and 1 tsp of sugar. Set off to the side for 5 minutes. Add 3 cups of flour, salt, cheese, olive oil, and 2 cups warm water to mixer and combine thoroughly. Add yeast and last 3 cups of flour and continue to mix for 5 minutes or until dough is formed. Knead with your hands for another 5 minutes. Form into ball and place in a warm room, covered with a towel for 45 minutes. Dough should double in size. After this, spread dough on a well-oiled inch thick baking pan, coat the dough with olive oil, and prick surface of dough with a fork. Place the pan back in warm room for 45 minutes. Preheat oven to 500 degrees.
Sauce:
Cover bottom of pot with olive oil and garlic. Sauté until garlic starts to cook. Add tomatoes, salt, Italian seasonings, and cheese and mix to incorporate. Cover and cook on simmer for 20 minutes. Let sauce cool and set aside.
Add sauce on top of dough, add more romano cheese. Bake for 15 minutes or until crust browns. Serve hot or cold!
