Vegan "Cream" Sauce

Vegan Cream Sauce (5 servings)

45 minutes prep + cook time

Ingredients:

1 lb pasta of your choosing (I used angel hair)

1 can Hunts diced tomatoes

1 can Cannellini beans

1 Roma tomato diced

1/4 onion diced

1 cup spinach

2 tbsp olive oil

2 tbsp Italian seasoning

2 tbsp garlic

1 tbsp salt


Bring water to a boil and cook pasta until al dente. Strain and set aside. Sauté onion in olive oil until browned then add Hunts and roma tomatoes. Cover and simmer until starts to boil then add Italian seasoning and salt. In separate pan sauté spinach and beans until cooked down. Add all ingredients into blender and thoroughly mix until a think sauce is left. On low heat, warm up sauce until brought to a boil. Serve over pasta and enjoy!
