Vegan "Cream" Sauce

Over the weekend, Chris had a show at a county fair. I LOVE fairs and was high on rides, crap food, and farm animals. There was a rumor going around that a man was trying to sell his bunny and our friends asked if we'd be interested (because we already have a pet bunny.) We of course said no until we ran into these stupid teens holding an extremely scared bunny and acting reckless. I scolded them about their decision and eventually took the poor thing home with me. Life serves you big bumps in the road of life but it's how you show up in those moments that build your character.

Recipe of the Day : Vegan Cream Sauce (5 servings)

45 minutes prep + cook time

1 lb pasta of your choosing (I used angel hair)

1 can Hunts diced tomatoes

1 can Cannellini beans

1 Roma tomato diced

1/4 onion diced

1 cup spinach

2 tbsp olive oil

2 tbsp Italian seasoning

2 tbsp garlic

1 tbsp salt

Bring water to a boil and cook pasta until al dente. Strain and set aside. Sauté onion in olive oil until browned then add Hunts and roma tomatoes. Cover and simmer until starts to boil then add Italian seasoning and salt. In separate pan sauté spinach and beans until cooked down. Add all ingredients into blender and thoroughly mix until a think sauce is left. On low heat, warm up sauce until brought to a boil. Serve over pasta and enjoy!
