Calzones, baby!

Spring is here! Along with the Earth coming back alive, so am I. I have self-declared myself as a retreat teacher and to date have 2 retreats coming up, one of which is almost completely sold out! If you love to travel, why not combine your work into it? The more chances I take, the more the Universe supports the jump. So I'm jumping!



Recipe of the Day : Calzones (2 servings)

Prep and cook time 45 minutes


1 ball of dough divided in half

3 sausage links sliced (I used Beyond Meat Hot Italian and they're SO good)

1 bell pepper diced

1 cup mozzarella cheese

1/4 onion diced

1 tbsp Olive oil

1 tbsp Italian seasoning

1/2 tbsp garlic

1/4 tbsp oregano

1/4 tbsp salt

Any other fillings you'd like to add!


Preheat oven to 425 degrees. Cover bottom of a pan with 1/2 tbsp of olive oil and sauté sausage, bell pepper, and onion until almost fully cooked. Meanwhile, cover bottom of baking pan, preferably a bread pan, with half of the remaining oil and spread out each 1/2 ball of dough from the middle to the edges. Add all other seasonings to the veggie pan and mix thoroughly. Cover bottom of doughs with cheese, then split filling evenly. Wrap the two sides of the dough to the midline then starting at the bottom roll up like a burrito. Make sure the two calzones have enough space between them for baking growth. Put rest of oil on top of calzones to brown and crisp. Bake for 20-30 minutes. Let sit to cool then enjoy!


P.S. I served with marinara dipping sauce and it was awesome!
