Cauliflower Cream Sauce (4 servings)
20 minutes prep and cook time
3 cups cauliflower florets and white stem cut up
2 Beyond Meat Italian sausage links
1 cup parmesan cheese shredded
1/4 onion diced
1 tbsp olive oil
1 tbsp salt
1 tbsp garlic powder
1 tsp black pepper
Cover bottom of pot with oil and onions. Sauté until onions are cooked. Place cauliflower and 1 cup water in pot and bring to a boil (cauliflower will not be fully covered.) Add cheese, reduce heat to a simmer and cover until cauliflower is soft and cheese is mostly melted. Meanwhile, cook your sausage in oil in a separate pan. Add cauliflower mixture plus seasonings to a food processor and blend until it becomes a thick, sauce-like texture. Add sausage and oil it cooked in to the sauce for extra heat! Serve hot on top of your favorite pasta or grain and enjoy.
*I added a little homemade pesto I had left over for more flavor!
