Black Bean and Quinoa "Burgers"

Black Bean and Quinoa "Burgers" (4 servings)

30 min prep + cook time

Ingredients:

1 can black beans (I used the Kuner's black beans with jalapenos and lime)

1/4 cup quinoa

1 egg

1 red bell pepper diced

1/4 yellow onion diced

1/4 cup bread crumbs

1 tbsp garlic powder

1 tbsp cumin

1 tsp Schultz' Hot Sauce (or any hot sauce you prefer)

Salt and pepper to taste


Bring 1/2 cup of water to boil then add quinoa and change to simmer. Cook for 15 minutes. Put black beans in food processor until turned into a paste.


Combine quinoa, black beans, egg, red bell pepper, onion, bread crumbs, garlic, cumin, and hot sauce in bowl. Add salt and pepper to season.


I let the concoction settle in the fridge for a few hours but you can cook immediately. When naming this recipe "Burgers," the quotes are because I have yet to form pretty burger shapes - they more turn out like a slop but if you've been following my recipes, you know I love this consistency. I served with homemade guacamole and pita. Serve hot and enjoy!
