I've always felt a deep connection to Forrest yoga. For those of you who aren't familiar, Forrest yoga is a sector that focuses on core and longer holds. It isn't super power-flowy but allows you to tap into your breath and your muscle strength in a different way. Today, one of my favorite teachers held a Core Workshop that once again reignited my love for yoga. There are few chances to slow down in my day to day life so setting aside 2.5 hours for focus, agility, and mental clarity was amazing. February is the month of love - make sure you're saving time for yourself.
Recipe of the Day: Black Bean and Quinoa "Burgers" (4 servings)
1 can black beans (I used the Kuner's black beans with jalapenos and lime)
1/4 cup quinoa
1 red bell pepper diced
1/4 yellow onion diced
1/4 cup bread crumbs
1 tbsp garlic powder
1 tbsp cumin
1 tsp Schultz' Hot Sauce (or any hot sauce you prefer)
Salt and pepper to taste
Bring 1/2 cup of water to boil then add quinoa and change to simmer. Cook for 15 minutes. Put black beans in food processor until turned into a paste.
Combine quinoa, black beans, egg, red bell pepper, onion, bread crumbs, garlic, cumin, and hot sauce in bowl. Add salt and pepper to season.
I let the concoction settle in the fridge for a few hours but you can cook immediately. When naming this recipe "Burgers," the quotes are because I have yet to form pretty burger shapes - they more turn out like a slop but if you've been following my recipes, you know I love this consistency. I served with homemade guacamole and pita. Serve hot and enjoy!
