Green Italian Soup

Green Italian Soup (4 servings)

40 min prep + cook

Ingredients :

(in order of use)

2 tbsp olive oil

1 tbsp salt

1 tbsp garlic powder

2 cups broccoli chopped

2 cups kale chopped

4 tbsp veggie bouillon

1/2 sweet potato diced

1.5 cup pastina or other small pasta

Red pepper flakes to taste

Cover bottom of pot (or pressure cooker) with olive oil, garlic, and salt. Start to heat as you chop the broccoli then add, cover, and cook until soft. Add 2 cups of water and kale to blender or food processor and blend. Add veggie bouillon and blend again until fully incorporated. Add veggie "broth" to broccoli with potatoes, pastina, and red pepper flakes if you want spice. Cover and let cook until potatoes are soft (about 15 min.) Let sit for a few minutes then serve hot with cheese. Enjoy!
